Fermented Cranberry Relish
Ingredients
Fresh cranberries (3 cups)
Dried cranberries (1 cup)
Ginger root (2 inch piece)
Sugar (3 tablespoons)
Sea salt (1 tablespoon)
Cinnamon (optional)
Walnuts (optional)
Instructions
Rough chop fresh cranberries in a food processor.
Transfer to a bowl and add sea salt; stir well to draw out the brine.
Grate the ginger root and add it to the bowl.
Add sugar and dried cranberries; mix thoroughly.
Add optional cinnamon or chopped walnuts, if desired.
Pack the mixture into a jar and press it down firmly.
Add a weight to keep everything submerged beneath the brine.
Cover with a lid or cloth and store in a cool, dark place.
Ferment for about 5 days, then harvest and refrigerate.
