Fermented Cranberry Relish

Ingredients

Fresh cranberries (3 cups)

  • Dried cranberries (1 cup)

  • Ginger root (2 inch piece)

  • Sugar (3 tablespoons)

  • Sea salt (1 tablespoon)

  • Cinnamon (optional)

  • Walnuts (optional)


Instructions

  1. Rough chop fresh cranberries in a food processor.

  2. Transfer to a bowl and add sea salt; stir well to draw out the brine.

  3. Grate the ginger root and add it to the bowl.

  4. Add sugar and dried cranberries; mix thoroughly.

  5. Add optional cinnamon or chopped walnuts, if desired.

  6. Pack the mixture into a jar and press it down firmly.

  7. Add a weight to keep everything submerged beneath the brine.

  8. Cover with a lid or cloth and store in a cool, dark place.

  9. Ferment for about 5 days, then harvest and refrigerate.
